Hello everyone and happy Hump Day!
I’m back with another edition of What I Ate Wednesday! I love putting together these posts, so I hope you enjoy reading them. 🙂 While I mostly like the meal ideas I get from What I Ate Wednesday posts, another side benefit is the strange looks I get from my neighbors. I take most of my pictures on my back porch since there’s good natural lighting. The somewhat-distressed wood also makes for a nice, not-too-distracting backdrop. I think I have thoroughly amused them lately by running out into the cold (often with no shoes or coat), placing a steaming bowl of food on the ground, taking several pictures, then running back inside. I guess I’m happy to provide some free family-friendly entertainment!
This week’s What I Ate Wednesday started off with… surprise! Spinach and sausage quiche! But this week I added red pepper flakes to the mixture, so it’s totally different. 😉 I ate this with a side of chunky applesauce I found at Trader Joe’s.
Around 10am, I stopped working for a quick mid-morning. I decided on a gluten-free English muffin, which I toasted and topped with coconut oil and plenty of Trader Joe’s Everything But The Bagel seasoning. I picked this up on my last grocery run and I’m so glad I did! It’s delish!
For lunch, I made some turkey lettuce wraps with avocado that I dipped in spicy mustard. Lunch has a tendency to sneak up on me and this is such a quick, healthy meal to throw together. On the side, I had some plantain chips. I would have loved to dip them in some salsa but I was out. Womp, womp.
For dinner, I made some Mexican beans and veggies which I served over rice and topped with an avocado. This is definitely another “non-recipe”. 😉 I just sauteed some green peppers and onions, then stirred in some drained and rinsed pinto beans and a couple cans of Rotel. I ended up adding lots of garlic powder and cumin for some extra flavor. For whatever reason, I wasn’t in the mood for meat, so this hit the spot!
