Hey friends! I’m back with another edition of What I Ate Wednesday. I always like to snoop on what others are eating because it gives me some quick and easy meal ideas. Recipes in cookbooks and fancy food blogs are drool-worthy, but I find that they often take too much time to prepare on a day-in-day-out basis. So… What I Ate Wednesday to the rescue!
I started off my day bright and early with some sausage and spinach quiche. This might look familiar. What can I say? When I find something I like, I stick with it! On the side, I had some hash browns that my husband made the night before. He makes the best breakfast food. It’s his speciality. 🙂
Mid-morning, I grabbed an iced black tea from Starbucks. I was feeling a little hungry, so I had an apple pie flavored fruit and nut bar.
Around noon, I had some leftover chicken and broccoli over rice that I made for dinner the night before. I sautéd the chicken and broccoli pieces in buffalo sauce with a little water to thin it out a bit. Not so beautiful to look at, but it tasted great!
After my afternoon workout, I had some cucumber slices dipped in a generous serving of guac. There may or may not have been a few undocumented organic corn tortilla chips to finish off the guac. 😉
For dinner, I made some baked salmon, oven-roasted potatoes and steamed asparagus. I coated the potatoes lightly with coconut oil, then covered them in paprika, garlic powder and a little (MSG-free) seasoned salt. They came out golden brown and perfect! They tasted pretty amazing too.
I still felt a bit hungry before bed, so I made some sweet apple “nachos”. I arranged some apple slices on a plate, drizzled them with almond butter and sprinkled on a few chocolate chips and some shredded coconut. Hubby and I split this while he played video games and I caught up on my blog reading. (Full disclosure: This isn’t a picture of the apple nachos. It was too dark to take a pic that night so I remade them the following morning. Then I had to eat them. How sad. 😉 )
That’s a day in my, err… food! I hope it gave you some ideas for a few quick and healthy meals!
