What I Ate Wednesday #1

Hey friends!  How are you on this fine Wednesday?  It’s been quiet around these parts, which almost never happens, so I’m soaking it in!  I’m happy to report that I’m feeling a little less run down too.  Maybe it was all the golden milk?  😉

Remember how I mentioned that I enjoy reading What I’m Loving Lately posts?  What I Ate Wednesday would definitely fall into that same category.  I remember in undergrad planning my grocery shopping days on Thursday so I could take advantage of all of the new meal ideas I learned on the previous day! Now that I FINALLY decided to start my own blog, I thought I’d incorporate What I Ate Wednesday as well!  

Enough with the rambling… Now onto the food!

I started my day out with a delicious, but not so aesthetically-pleasing meal of sausage and spinach quiche and an apple pie bar. I’m still working on the recipe for the quiche, but when it’s perfected I plan on sharing it here.  It’s a yummy breakfast that’s super-easy to meal prep.  And something about getting a serving of veggies in with breakfast makes me feel extraordinarily accomplished.  (*pats self on back*)

For lunch, I threw together some turkey lettuce wraps that I dipped in spicy mustard.  They would have been better with some avocado slices tucked inside, but my last avocado was brown when I cut into it.  Womp, womp.  I had some cheddar-flavored mini rice cakes on the side.

I was hungry again a couple hours later, so I whipped up my go-to green smoothie!

For dinner, I made a much-less-beautiful version (I’m sensing a theme…) of Lindsay’s Saucy Paleo Mongolian Beef and Broccoli “Rice” Bowls over on her blog Cotter Crunch.  While it was still delightful, I recommend using flank steak like she suggests.  I didn’t have any steak in the freezer nor did I feel like running to the store, so grass-fed ground beef had to do.

Dessert was a piece of chili dark chocolate.  Pretty darn good, but mint dark chocolate still wins any day.

I wanted a little snack before bed, so I made a couple pieces of healthy cinnamon sugar toast and a mug of chamomile tea.

And that’s a wrap!  My first What I Ate Wednesday is in the books!
