Hello friends and happy Wednesday!
I thought I’d just check in with another What I Ate Wednesday post. I haven’t done one in awhile but I always enjoy them. Y’all keep me accountable and on track with healthy eating!
I started my day out with an egg and spinach sandwich on gluten-free toast. Not the most aesthetically-pleasing breakfast, but it was tasty nonetheless! (Get the “recipe” here!)
Hubby and I went home this past weekend to catch up with family. There’s a great local produce stand close to my parents’ house and my mom had picked up some fruits and veggies for us to take home. This cantaloupe was part of the “haul”. It was delicious! I may or may not have eaten some of this right out of the container for a snack.
For lunch, I had leftovers from the night before. I threw together some sheet pan chicken fajitas and they turned out great! I didn’t feel like making an actual fajita for lunch though, so I just topped the chicken and veggies with an avocado and called it good.
While I was out running errands, I snacked on this bar. My in-laws gave me one to try while we were at home over the weekend. To be honest, I had incredibly low expectations. I mean, it’s a chocolate peanut butter-flavored bar with chicken listed as an ingredient!? However, it was surprisingly good! Even my bloodhound-like pregnancy nose couldn’t detect the chicken bone broth. It mostly just tasted like a peanut butter Quest Bar.
For dinner, I pan-seared some wild-caught salmon fillets in coconut oil with a little bit of seasoned salt. I served this alongside some oven-roasted asparagus and sweet potatoes. Quick and delicious!
Another simple, yummy, but not exactly Insta-worthy What I Ate Wednesday in the books! 🙂
P.S.- What have you been eating lately? I’ve been loving all of the in-season summer produce!
