Well, look no further! No Sugar Cucumber Salad has been a (secretly healthy- shhh!) crowd-pleaser in my family for years and now I’m sharing it with you! It’s cool and crisp, sour and sweet, and incredibly refreshing. The best part is that it comes together in 15 minutes or less!
No Sugar Cucumber Salad
3 English cucumbers, thinly sliced
½ Vidalia onion, thinly sliced
¾ c white vinegar
¾ c water
4 stevia packets (I like Stevia in the Raw brand)
½ T dried dill weed
1 t pink Himalayan or Celtic sea salt
½ t freshly ground black pepper
Place cucumbers and onions in a big bowl. You’ll want lots of room to stir it all around. Combine vinegar, water, stevia, dill, salt and pepper in a small saucepan. Heat over medium heat until it comes to a boil. Remove from heat and gently pour over the cucumbers and onions. Use tongs to toss the salad until every piece of veggie is coated in the dressing. Cover and refrigerate for at least 2 hours or overnight (better IMO). Toss again before serving. Enjoy!
