I try to live a healthy lifestyle- exercising several times per week, drinking plenty of water, getting a good night’s sleep, that sort of thing. But if you sit a whole batch of gluten-free cookies in front of me, especially chocolatey ones, look out! I’ll find a way to rationalize eating desserts until the entire pan is gone. (I could eat a sweet potato with dinner… or I could eat this brownie. They’re both carbs, right?)
Enter the single serving no bake cookie. It does an excellent job of satisfying my chocolate cravings without the hassle of making (and eating… sigh) an entire batch of cookies. Because it’s made in one bowl in the microwave, clean up is a cinch. It’s even healthy to boot!
So whip one of these up after dinner and enjoy the ooey, gooey, chocolatey deliciousness!
Healthy Single Serving No Bake Cookie
1 T maple syrup
1 T natural peanut butter
1 t coconut oil
2 T oats (make sure to use certified gluten free if needed!)
1 T shredded unsweetened coconut (or 1 more T oats)
1 t cocoa powder (I used dark cocoa powder but regular cocoa is great too!)
3 drops vanilla extract
1 dash salt
Place the maple syrup, peanut butter, coconut oil, cocoa powder, vanilla and salt in a microwave-safe bowl. Microwave until melted (about 30 seconds in my 1000W microwave). Stir this liquid mixture until well combined. Mix in the oats and coconut. Pour the mixture onto a sheet of wax paper, forming into a cookie shape. Place in the fridge for approximately 10 minutes to firm up. Enjoy!
