Healthy Grocery Haul and Meal Ideas

Hello friends and happy Monday!  🙂

I mentioned recently that I meal plan a whole month’s worth of healthy meals at once.  I received a couple questions and comments on the topic, so I thought I’d give you a bit more of a behind-the-scenes look with a healthy grocery haul and what I plan to make with all of those yummy groceries!  

Meal planning saves Hubby and I a ton of money each month and keeps me from making the same few meals over and over with our busy schedules.  We usually only shop for 2 weeks at a time with a small trip to the store after 1 week for fresh produce, if needed. I’ve tried shopping for an entire month’s nonperishable goods (freezer, pantry and household) at once, but it’s waaay too much to fit in our tiny apartment!

For this 2 week stretch, we went to Aldi and Trader Joe’s.  I normally only go to Aldi for groceries, but I’ve been seeing so many amazing TJ’s finds around the blogosphere I had to check them out for myself!  Here’s a glimpse of what we got from each store:

Side note: If I do any more healthy grocery haul posts, I need to get a bigger kitchen counter!  (hint, hint Hubby!) 😉

I typically only plan 5 meals per week because we inevitably end up eating leftovers a couple times.  Most of the time, I rotate through the same handful of meals for breakfast and lunch, which makes it much easier to plan. Also, I had some ingredients for these meals at home, therefore I didn’t need to purchase them.  Always use what you have first so it doesn’t go to waste!  Here’s what I plan to make with all those groceries:

  • Pulled pork BBQ with roasted broccoli
  • Grilled chicken, GF stuffing, roasted green beans
  • Split pea soup
  • Spicy tuna mayo onigiri and stir fry veggies
  • Paleo spaghetti (zoodles) with meat sauce
  • GF/DF mac n’ cheese with roasted broccoli
  • Deconstructed egg rolls
  • Salmon, roasted paprika potatoes and spicy kale
  • Paleo taco skillet
  • Ranch chicken and veggie sheet pan dinner
