3 Quick and Healthy Breakfasts with Veggies

Anyone that knows me knows I love breakfast!  I’m one of those people that literally can’t function without  it. It’s my favorite meal of the day! Not only do I try to have a balanced breakfast each morning, I also try to sneak in some veggies.  It makes me feel like I’ve accomplished something before I’ve even left the house! What I don’t love, however, is dirtying every dish in the house and turning my kitchen into a war zone before 7am.  Out of necessity, I’ve come up with several quick and healthy breakfasts with veggies that I can make on a daily basis. These are 3 of my current favorites!

Microwave Egg and Veggie Sandwich

Not glamorous but delicious!  Toast 2 pieces of bread to your liking.  Spray a microwave-safe bowl (really well!) with coconut oil spray, then tear up a handful of spinach leaves and add them to the bowl.  Crack 2 eggs on top and stir it all up. Pop this in the microwave for 1 min 30 sec or until set all the way through. (Make sure to flip it over and check the bottom!)  Assemble into a sandwich and top with cheese or avocado if your heart desires!

Zucchini Oats

Zucchini oats, or “zoats”, were all the rage on the blogosphere a couple years ago but I’m still eating them.  What can I say? They taste good and get the job done!  Add ⅓ cup old-fashioned oats, ⅓ cup grated zucchini and ½ cup water to a microwave-safe bowl.  Microwave on high for 1 min 30 sec. Top with raisins, chopped walnuts, cinnamon and/or a little real maple syrup if you’re feeling fancy. I usually serve this with a fried egg or nitrate-free turkey sausage on the side for some additional protein.

Not exactly original, but delicious and quick nonetheless!  I’m partial to my Go-To Green Smoothie because it’s relatively low in sugar and keeps me full for hours.  (Get the recipe here.)  If green smoothies really aren’t your thing, you’re not out of luck!  There are TONS of delicious smoothie recipes out there with all types of veggie goodness packed inside.
